Honey Apple Pie

This is a fall family favorite. Especially rewarding after a trip to the apple orchard.
Ingredients

1 pastry for double-crust pie*
5 cups cored, sliced, peeled apples:
        1/4 granny smith mixed with 3/4 red delicious
1 teaspoon cinnamon
1 teaspoon nutmeg
2 tablespoons butter, cold
3/4 cups honey

*Double recipe for deep-dish
Preparation

Preheat oven to 400 F.

Place the bottom crust in your pan. Fill with apples, mounded slightly. Sprinkle cinnamon and nutmeg evenly on top of apples. Dot with small pieces of the butter. Pour 3/4 cup honey over entire pie. Cover with lattice work crust.

Bake or 35-45 minutes or until apples are tender. If crust starts to brown too quickly, cover with foil, shiny side out.

Tried topped with vanilla ice cream and a dash of nutmeg.
